Having leftover ham is a wonderful thing. Ham sandwiches, ham and eggs, ham and beans…and then there is scalloped ham and potatoes. Let’s just say it is rich and creamy yumminess.
Start bysauteeing a bit of onion in a tbl of butter. Add 1\4 c of flour. Mix together and add a couple cups of milk. Add 4 slices of american or swiss cheese.
While the onions are cooking, slice 4 large red potatoes thinly, cover with water and microwave for 6 minutes.
Spray a casserole pan with Pam, add drained potatoes, add chopped ham. Top with cream sauce.
Cover and bake @ 350 for 45 minutes.
